BARBER CHAIR STOUT X

This “Russian Imperial” stout was inspired by the original English brewers that invented the style for the Czarist Russian Imperial courts.  These beers were high in alcohol, mostly to survive the journey, ranging from 9-14% and aged from 1-2 years before being sent off to Russia.  This ambient temperature aging throughout the summer helped to create the complex fruity off-flavors associated with the style.​

  • Goes down smooth, 9% abv, full flavor, medium body.

  • The head is a beautiful toffee, while the beer itself is dark walnut when you can see through it.

  • Light caramel and toffee play on the tongue as a chocolaty bitter cherry cape the scene.

  • Biscuit and roasted malts are revealed, motioning to a pleasant and mild bitter chocolate finish.

  • The Barber Chair stout warms the throat as it does the rest of one’s body, brewed for sharing and freezing temperatures.

THE #160 SCOTTISH ALE

Inspired by the immensely popular Scottish “wee heavy’s,” and “scotch,” ales that were sold at a premium around the globe in the 1800’s. Scotland’s pastoral breweries fermented their ales much closer to lager rather than ale temperatures, creating a very unique style of ale. 160/- is a reference to the Scottish shilling, and the price of a barrel.

  • 13.5% abv, full bodied, full flavor thick, chewy. When aged, thins and becomes vinous.

  • Oats, wheat and rye represent Scotland’s pastoral lands, infusing spice and thickness.

  • Honey is added in respect to the Pict wild honey-collector brewers of Scotland. This also adds drinkability and bumps up the alcohol.

  • Fresh,160/-, smells of caramel/caramelization with a clean, but sharp boozy-ness with a hint of whisky plum. Very little carbonation enhances the deep malty profile. Rye and smoke-whisky flavor shine through the malt complexity.

  • Aged 1.5 years. Nose of brandy, cranberry, malty syrupy-maple, brown sugar, chocolate to fruity. Flavors of cranberry and chocolate covered raspberries.

NOMADIC ABBEY #9

WWI left Belgium and its monastic brewers bare and shut down leaving the consumers with weak beer. A new law in 1919 that prohibited the sale of gin at café’s created this uniquely shared style that can only be described as a Belgian strong/abbey ale.

  • 10.5% abv, full flavor, medium body, complex

  • Raw cane sugar is added to lower the overly malty body, creating a unique drinkability

  • Play between the full attenuation and the wholesome flavor of oats as well as a single decoction which includes prunes & cane sugar.

  • Spicy Willamette hops blend with black & red teas off setting blueberry, lychee & caramelized prunes.

  • Finishes dry, with an aromatic whisper of lemon from Sorachi ace hops.

THE

OLD WIT

This beer is an ode to the original white/wit beers of Belgium drunk slightly sour and fresh.  These brewers were also farmers using their raw wheat, oat and buckwheat. These special beers were the first historically to add hops. In respect to this and the American craft-beer movement, this beer is aromatically hoppy, adding to its overall refreshing drinkability.

  • 2.2%-3.7% abv, full flavor, medium body.

  • Blend of Lactobacilli kettle-soured and Brettanomyces oak aged wit, fresh hop filtered wit & dry hopped (aged) wit to create a refreshing digestive aid & aromatically hoppy ale.

DOUBLE PAIL

Inspired by the British Isles. Honey is added in respect to the Original mead makers, the Picts from Scotland. Rosemary was widely used in England for beer and food alike, and is said to induce drunkenness and aid in digestion. This beer playfully called “Double Pail,” is not only in-reference to English pale ale but to their prideful cask beer that was once served in pails to be brought home and further poured into glasses.

  • 9.9% abv, full flavor, medium body.

  • The beer goes down easy like a wholesome piece of bread that has been dipped in honey.

  • The floral honey and rosemary blend with locally cultivated cascade hops, magnificently intertwining bitterness & piney aromatics resulting in very refreshing ale.
